are there any particularly easy ways to remove all uncessary packages from a fresh install?

i would say even a minimal install of debian has extra packages that arent totally necessary installed (aptitude,etc)

rgr: you want to read system mail but no "mail" program... to read any text files be it logs or mails you can use nano.
