the installer doesn't propose options to you. you install stable and upgrade

so you install as little as you can, basic system only. then change your repos and upgrade. only then you'll install whatever desktops or applications you like

ambient: right now i'm chatting on my audio workstation or studio or whatever. it is what i would call a "production" or a "critical" system. so i always use stable, there are backports available if you really feel your libreoffice is too old
